TRES LECHES CAKE

Ingredients:

  • 1 cup of sugar

  • 5 eggs

  • 1 cup of flour

  • 1/3 cup of milk

  • 1 teaspoon vanilla extract

  • 1 1/2 teaspoons baking powder

  • 1 can of condensed milk

  • 1 can of evaporated milk

  • 2 cups of whipping cream

  • Fruit of your choice.

Preparation:

  1. Preheat the oven to 350°F. Burn a medium aluminum mold.

  2. Separate the yolks from the egg whites.

  3. Beat the egg yolks together with ¾ cup of sugar until lightly colored and the volume has doubled. Alternately add the milk, and vanilla, slowly add the cup of flour and the baking powder.

  4. Beat the egg whites until stiff in a small bowl. Gradually add the rest of the sugar. Beat until the mixture is firm, but not dry. Wrap the egg whites in the yolk mixture. Pour into the greased mold.

  5. Bake at 350°F for 45 to 50 minutes. Insert a fork into the surface of the cake and if it comes out clean, the cake is done.

For the Tres Leches:

  1. Mix condensed milk, evaporated milk, and ¼ cup of heavy cream.

  2. Exclude one cup of the tres leches mixture to make the meringue.

  3. Make holes with a fork throughout the cake to facilitate the absorption of the milk. Slowly pour the rest of the tres leches over the cake until it has been absorbed.

  4. Whip the rest of the cream until it thickens and reaches the point of meringue. Cover the cake and decorate with cherries, strawberries or the fruit that you like best.
