Camping Burrito
Ingredients:
Flour tortillas
Scrambled eggs
Grilled potatoes
Shredded cheese
Bacon or sausage (optional)
Avocado
Spinach
Instructions:
Cook the scrambled eggs and grill the potatoes in a pan on a camping stove or over a fire.
Warm the flour tortillas on the pan or over the fire.
Lay a tortilla on a flat surface and add scrambled eggs, grilled potatoes, shredded cheese, bacon or sausage, avocado and spinach.
Roll up the burrito tightly, tucking in the sides as you go.
Campfire Nachos
Ingredients:
1 bag of tortilla chips
1 cup of shredded cheddar cheese
Chilli or shredded chicken
1 diced tomato
1 diced avocado
1 diced jalapeño (optional)
1/4 cup diced red onion
1 tablespoon of olive oil
Salt, to taste
Fresh cilantro, chopped (optional)
Instructions:
Spread the tortilla chips in a single layer on a large camping skillet or Dutch oven.
Sprinkle the shredded cheddar on top of the chips.
Pour the chilli or chicken over the cheese.
In a separate pan, heat the olive oil over medium heat and add the diced tomato, avocado, jalapeño, and red onion. Cook for a few minutes until slightly softened.
Spoon the cooked mixture over the chilli/ chicken on the nachos.
Place the skillet or Dutch oven over the campfire or grill and cook until the cheese is melted, approximately 5-10 minutes.
Sprinkle it with salt to taste and chopped cilantro.
Dessert
Banana S’more
Ingredients:
Bananas
Chocolate chips or chocolate bar
Miniatures marshmallows
aluminum foil
For this very easy recipe, you can use your campfire
Instructions:
Peel the bananas.
Cut the bananas lengthwise and slightly open. Place on a rectangle of aluminum foil.
Add the marshmallows and chocolate chips/ pieces from the chocolate bar to the sliced banana.
Wrap each banana in foil, and set wrapped bananas in coals of the campfire.
Cook for around 8 to 10 minutes.
Remove from the campfire and open carefully, you can add any cereal of your choice (optional).
